Oatmeal Pancakes
- Mix together 1 C GPF HiFi® rolled oats and 1 1/8 C hot milk in medium bowl.
- Add 2 T organic canola (or high-oleic safflower/sunflower oil) and 2 egg yolks.
- In larger bowl, mix together ½ C GPF whole white wheat flour, 1 T brown sugar, 1 t. baking powder and ¼ t. sea salt.
- Add oats mixture to flour mixture and mix well. Optional: add a cup of fresh or frozen blueberries. Beat 2 egg whites until light & fluffy, then fold into batter.
- Drop batter by ½ cup measures onto hot griddle. Turn when lightly browned and bubbles form on top; brown other side.
- Enjoy with real maple syrup, honey and/or fruit.
