Sesame
Sesame seeds are thought to be among the earliest seasonings and sources of edible oil, dating back over 5,000 years. The annual herb Sesamum indicum is native to the East Indies. Its lavender-pink flowers mature into seed-filled pods. When ripe, the pods burst open with a pop, scattering the seeds. For this reason pods are usually gathered by hand before they are fully ripe.
Sesame seeds have been used for centuries throughout the Orient and Middle East for sweet confections and savory dishes. Tahini, or sesame paste is used to make hummus and other sauces in Middle Eastern cuisine. African slaves brought benne (sesame) seeds to America, where they became popular in Southern cooking.
Sesame seed hulls contain oxalic acid, which has a bitter taste and can also interfere with calcium absorption. Our sesame seeds have been hulled.
